This recipe just oozes “family mealtime.”

Ingredients:

  • 1 lb ground turkey
  • 1 medium-sized zucchini, chopped
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 tbsp olive oil (plus extra for potato chips)
  • Sea salt, to taste
  • Pepper, to taste
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1 tsp Italian seasoning
  • 2 tbsp tomato paste
  • 3-4 potatoes, thinly sliced

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. In a large skillet, heat 2 tbsp of olive oil over medium heat.
  3. Add chopped peppers, zucchini, onions, and minced garlic to the skillet. Sauté until the vegetables are tender.
  4. Push the vegetables to one side of the skillet and add the ground turkey to the other side. Break it up with a spatula and cook until browned.
  5. Season the turkey with sea salt, pepper, garlic powder, onion powder, paprika, chili powder, cumin, and Italian seasoning. Mix everything together.
  6. Once the ground turkey is cooked through, add tomato paste to the mixture. Stir well, and then let it simmer for a few minutes.
  7. While the turkey mixture is simmering, prepare the homemade potato chips. Place thinly sliced potatoes on a baking sheet, brush with olive oil, and sprinkle with sea salt. Bake in the oven until crispy.
  8. Pair the ground turkey mixture with the homemade potato chips for a delicious and healthy meal.
