Use 4 cups of fresh spinach if you plan to make this substitution. Frozen spinach is very dense, which is why this recipe only calls for 1 cup.<\/p>\n<p><strong>Ingredients<\/strong><\/p>\n<p>1 clove fresh garlic, minced<\/p>\n<p>1\u20442 teaspoon all-purpose seasoning<\/p>\n<p>1\u20442 cup reduced-fat Parmesan cheese<\/p>\n<p>1 cup shredded fat-free mozzarella, divided<\/p>\n<p>1 1\u20442 cup fat-free ricotta cheese<\/p>\n<p>1 cup frozen spinach, thawed and drained<\/p>\n<p>1 cup tomatoes, diced<\/p>\n<p>1 teaspoon dried oregano<\/p>\n<p>1 teaspoon dried basil<\/p>\n<p>1\u20444 teaspoon nutmeg<\/p>\n<p>1 tablespoon sugar or Splenda<\/p>\n<p>6 mixed grain lasagna noodles, cooked<\/p>\n<p>1 cup marinara sauce<\/p>\n<p><strong>Directions<\/strong><\/p>\n<ol>\n<li>Mix garlic, all-purpose seasoning, Parmesan cheese, 1\u20442 cup mozzarella cheese, tomatoes, oregano, basil, nutmeg, and sugar. Set aside.<!--more--><\/li>\n<li>Coat a 9&#8243; \u00d7 13&#8243; baking dish with nonstick spray.<\/li>\n<li>Cut each lasagna noodle in half lengthwise. Place 2 tablespoons of spinach mixture on one end of lasagna noodle. Roll noodle around spinach mixture and place in dish. Repeat for all noodles.
