Coat a skillet with nonstick spray. Saute broccoli, onions, and mushrooms<\/span><\/p>\n<p align=\"left\"><span style=\"font-family: Arial, Helvetica, sans-serif;\">for 4 minutes over medium-high heat.<\/span><\/p>\n<p align=\"left\"><span style=\"font-family: Arial, Helvetica, sans-serif;\">2. Remove veggies from skillet and place in a bowl with tomatoes. Add<\/span><\/p>\n<p align=\"left\"><span style=\"font-family: Arial, Helvetica, sans-serif;\">Egg Beaters to skillet and cook on medium high for 2 minutes on<\/span><\/p>\n<p align=\"left\"><span style=\"font-family: Arial, Helvetica, sans-serif;\">each side.<\/span><\/p>\n<p><span style=\"font-family: Arial, Helvetica, sans-serif;\">3. Add vegetable mixture to middle of omelet and fold over.
