Almost too easy to even call it a recipe. It covers all the bases you need \u2013 protein, carbs, veggies, and healthy fat. Quinoa is very versatile and is a complete protein &#8211; which means that it contains all the amino acids you need. You get the fat and a ton of vitamins from the egg yolk, along with the protein in the egg. It is also naturally gluten free and vegetarian.<\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li>\u00bc c. (dry) quinoa \u2013 it expands when you cook it<\/li>\n<li>1 egg<\/li>\n<li>Broccoli<\/li>\n<li>Carrots<\/li>\n<li>Mushrooms<\/li>\n<li>Garlic<\/li>\n<li>Cumin<\/li>\n<\/ul>\n<p><strong>\u00a0Directions:<\/strong><\/p>\n<ol>\n<li>Cook quinoa according to package. Set aside.<\/li>\n<li>Steam vegetables either on the stove with water, or in the microwave.<\/li>\n<li>Once a pan is heated up, crack the egg and let cook for a few seconds. Once the top is almost cooked, put a bit of water in the pan and cover.
