1 1/2 teaspoons kosher salt (or half as much table salt)
1 clove garlic, peeled and pressed through a garlic press
1 medium zucchini, trimmed, and thinly sliced (1/4 inch) lengthwise
1 red bell pepper, ends sliced off, cored and seeded, and cut into wide strips
1 red onion, peeled and sliced 1/4-inch thick
12 corn tortillas or 8 flour tortillas
1/2 pound grated cheddar or Monterey jack cheese
a handful of cilantro leaves, washed and dried
sour cream and salsa for serving
Preheat your grill on high.
Whisk together the lime juice, olive oil, chipotle or paprika, salt, and garlic. Arrange the vegetables in a single layer on a large, rimmed baking sheet, and pour half the dressing over them, turning them to coat the slices evenly. Turn the grill down to medium-low and roast the veggies, turning them and adjusting the heat as necessary, until they are completely tender, 10-12 minutes. Remove them to a plate, dress with the remainder of the lime juice mixture, and set aside.
Heat a large griddle (or a heavy frying pan) over medium-high heat, and lay half of the tortillas into it (if you’re using a pan, you’ll need to do this in batches). Divide the cheese over them, top with the remaining tortillas, and cook until the bottoms are golden and crisp. Flip them, and cook until the tortillas are crisp and the cheese is melted.
Open the quesadillas and divide the cilantro and grilled veggies among them, cutting the vegetables as necessary to fit, then quarter the quesadillas and serve with sour cream and salsa.

For many students the months leading up to our spring break are some of the healthiest of the year. The idea of having the perfect beach body is enough to keep us temporarily out of the bar and away from fast food. Then that highly anticipated week comes and with an effort to make up for missed partying and pigging out it all goes out window. We can all relate with the urge to let loose and have some fun, but it doesn’t have to be this extreme. You have to ask yourself did really spend the last two months busting your butt in the gym to eat and drink it all away in one week?
New Balance has come up with a really neat set of earbuds which have been making my life easier all week. Yes, I know … they’re just earbuds, but they’re really quite clever. First of all, they go with all types of music players, so I haven’t had to search around looking for the perfect pair to go with my Apple or non-Apple products. That’s normally a pain. Second, these earbuds come with a variety of attachments so the user can choose a really long cord or a really short cord. I normally shove my mp3 player in my sports bra when I exercise, so you can imagine how freeing it felt to NOT have to shove a two foot wire in with it.
These earbuds are exactly what they say they are. They are made for sports. They’re lightweight, are worn behind the neck and fold up for easy storage. They haven’t fallen off once during my runs, weight training or kickboxing sessions and that speaks volumes. I’m going to give these Cool Tools an A+ rating and suggest you consider them next time you’re in the market!
